Stuffed Peppers with Quinoa and Feta

I stole this recipe from a friend years ago. I went to her house to let her dog out and she told me I could eat one of the leftover peppers she made. I was hooked! These are only five ingredients but you could add more or less to your liking. I imagine the possibilities are endless.

  • Bell peppers
  • Hamburger
  • Onion
  • Cooked quinoa
  • Feta

1. Preheat oven to 375 degrees.
2. Cook your quinoa ahead of time. (I have a Tupperware microwave steamer and it is life-changing).
3. Brown hamburger with onion. Drain fat.
4. Mix hamburger and onions with quinoa.
5. Stuff your peppers.
6. Top with feta.
7. Bake until the peppers are tender and enjoy!

    1. I haven’t tried those stuffed pepper enchiladas, but they look tasty. Try these I am sure you will like them. Caleb just fists the hamburger/quinoa mixture into his mouth. I haven’t made these in a while though; I need to get back into cooking!

Didn’t know about a microwave steamer, seems like I’ve been missing out! I hate cooking quinoa on the stove, so this sounds great! Thanks for sharing this recipe, it has all of my favorite ingredients! Ever tried it with chicken?

    1. I actually got the microwave streamer from Sarah! Ask her about the Tupperware her friend was selling- it is a lifesaver. Since we moved, I cannot find it though so we may have to buy a new one. They have cool colors to pick from too…and it’s dishwasher safe.

      I haven’t tried this recipe with chicken but I can imagine chicken or ground turkey would be amazing.
