The name says it all. These are one of my favorite foods and I have been craving them lately, so last night I made a huge batch of mashed potatoes so I could have these sandwiches for days.
My mom use to make these for us when we were little and it is something I have loved ever since. They are great with leftover mashed potatoes, but we also make a ton of mashed potatoes just to have these the next day.
Here is how you make them:
1. Make some mashed potatoes!
2. Put some mashed potatoes in a frying pan and cook them. (They are especially tasty if you can get some to be crunchy)
3. Toast two slices of bread and lather a layer of butter on ’em.
4. Place the mashed potatoes on top of the bread and sprinkle with salt and pepper!
These are basically open-faced sandwiches, but you could slap the bread together to make a true sandwich if you really need to. Manfriend does get sick of these because if I crave them- I tend to eat them for three days in a row! He also thinks they are too bland as they are and likes to add sour cream and cheese to his. So you can really dress these up anyway…but I think they are best just as they are.
Mmm, delicious! I love these sorts of treasures from childhood and I like that they are special to my family. I don’t think anyone would appreciate these like me, my brother and sister do, but that’s OK. They remind me of when I was little and on our “Journey to Thirty” anything that reminds us of childhood is always a treat!
